Embrace These 3 Elements in the New Year

~ More great resources just like the ones you’ll find in Nanci’s book Fresh Hope … Cleveland: Resources to Help You Navigate through Unsettled Times.

As you move into the new year, your life will be better —  richer and fuller if you learn to value and apply these three simple yet important elements:

  • Connect with Others ~ Socializing fends off isolation which is especially important during the cold winter months. Did you know that being with others will also help you live longer? It’s true. Read about the value of socializing in the book The Blue Zones.  (I have this book listed in my book.) The folks that live in these “Blue Zones” are over 100 years of age! You’ll be amazed at what they can do!
  • Exercise ~ Taking a walk, running, swimming, playing racquetball etc. all reduce blood pressure and stress. Exercise also increases your metabolism which will help you to lose weight! You’ll also sleep better as a result of working out!
  • Focus on the good already present in your life ~ Having a positive focus will help you enjoy your life more. One of the best things about being positive is it’s a powerful magnet that will help you attract some great opportunities and friends!

Love is More Than Just a Feeling ~ The Green Bean Club ~ Part 5

~ Hi! I don’t usually post things on Saturdays. But since Christmas Eve and Christmas are in a few days, I wanted to share this message with you that I wrote a few years ago. I won’t post anything on Christmas Eve (Tuesday my usual day to post new messages) because I’m hoping you’ll be in church, with family, or driving/flying to be with those you love. If not, make some new friends fast!

Don’t miss the message of The Green Bean Club, the title of today’s post because it may well affect how you spend your holiday this year! NOTE: The Green Bean Club can happen on any day or any holiday. It does not have to be limited to Christmas! Keep an open mind and you’ll discover that LOVE is More Than Just a Feeling too!

Throughout this new series I’ve been talking about LOVE. Therefore, in this CHRISTmas season remember the LOVE that Christ had for you. His birth, life, and resurrection, are more than examples that Love is More Than Just a Feeling. If you ask Christ into your heart (see Relationship with God tab on this blog), His love makes it possible for you to live beyond yourself, your insecurities, and your limitations. Christ came that you might have life and have it abundantly (John 10:10).

This post is dedicated to my sweet nieces in Seattle – Devon, Shannon, and Brenna. It’s through them that I learned of The Green Bean Club.

What’s The Green Bean Club? Okay, did the title of this post get your attention? I hope so. The idea came from something my sister used to tell her kids during dinner. She’d tell them it’s the Green Bean Club. And all they had to do to join was eat their green beans! And of course, they always ate them because the Green Bean Club sounded really fun and they wanted to be in the club!

It’s Secret … Well, this Christmas no matter what age you are, you can be in the Green Bean Club too. That’s because the real secret to the club’s success was that we took something nutritious like ordinary green beans and made them fun and desirable all wrapped up together with a great big sense of belonging. And BELONGING is really the key word here. Everybody needs to belong somewhere. So you see this post really isn’t about a club that rewards you for eating your green beans: it’s about families.

How You Can Be Part of The Green Bean Club This Christmas? Families make us who we are by nurturing, encouraging, and directing us. They also help mold our personality and character. But besides all that, a family is the place where we experience holiday traditions with food, decorations, music, and perhaps your funny Aunt Clara. Remember she’s the  one  who always bakes ten pies and brings her cute little Schnauzer. In a perfect world a family is the place where you’re accepted and loved in spite of everything. But even though it’s Christmas, not everyone has a family to visit and share in the simple wonder of belonging that is so much a part of this joyous holiday.

What Can You Do This Holiday? So here’s what I think you should take away from The Green Bean Club at Christmas: make a special point to see if any of your friends, co-workers, and neighbors will be alone this Christmas. It won’t take much but a moment of your time to reach out and care. If they don’t have plans, set another place at the table and invite them. Now we’re talking Green Bean Club!

Christmas Morning Recipes ~ from my kitchen to yours

~ Giving You More Resources Just Like in My Book ~ Fresh Hope … Cleveland.

It’s just about a week before Christmas. So I thought mothers and newly weds and all sorts of other folks might be needing some ideas of what to fix for Christmas morning. There are some great recipes below especially if you are feeding guests at your table this Christmas. I’ve included recipes for French Toast Bake, Egg Casserole, and Strawberry Blintz Crepes! Yum!

French Toast Bake — Easy and OH SO incredible on a cold Winter’s morning!!
1/2 cup melted butter (1 stick) 1 cup brown sugar 1 loaf of thickly sliced… bread 4 eggs 1 1/2 cup milk 1 teaspoon vanilla Powdered sugar for sprinkling Cinnamon for sprinkling
1. Melt butter in microwave & add brown sugar….stir till mixed. 2. Pour butter/sugar mix into bottom of 9 x 13 pan….spread around. 3. Beat eggs, milk, & vanilla 4. Lay single slices of bread in pan 5. Spoon 1/2 of egg mixture on bread layer 6. Sprinkle some cinnamon over bread/eggs 7. Add 2nd layer of sliced bread 8. Spoon on remaining egg mixture 9. Cover & chill in fridge overnight 10. Bake at 350 for 45 minutes (covered for the first 30 minutes) 11. Sprinkle with powdered sugar & cinnamon 12. Serve with warm maple syrup
Egg Casserole with Salsa
Bake at 350 for 30 – 40 minutes
6 eggs mixed with 1 cup of light sour cream
2 cups shredded cheese
Cooked ham or bacon if you wish (I usually don’t)
1/3 cup green onions chopped
1/3 cup green pepper or broccoli  (optional)
Spray lass pie pan with Pam or similar — layer ingredients starting with eggs. Serve with 1/2 cup salsa
Strawberry Blintz Crepe Pancakes
(These are my favorite!)
1 cup sifted flour
1 Tablespoon sugar
1/2 teaspoon salt ———– sift these 3 ingredients together
Frozen or fresh strawberries
Whipped Cream
Add Next:
1 cup light sour cream, 1 cup small curd cottage cheese, 4 beaten eggs. Stir all ingredients until combined.
Bake on a hot greased griddle ~ makes 24 crepes.
Top with sliced strawberries  — fresh (mashed to make a little juice) or frozen (thawed) and whipped cream.

Welcome to Part 4 of the series — Love Is More Than Just a Feeling.

In this series I’ve been talking about something we all want and look for – for our lives. Yes, it’s love. The sense that we matter and have a purpose — that we feel accepted and cared for in life is what everyone wants and needs. But we look for it sometimes as the song goes, in all the wrong places. We can look for it in relationships, career, money, prestige, fame, education, or through adventure or doing good to others. But the plain fact is, these things don’t bring satisfaction and many of them are dead ends in themselves. There is only one lasting type of love that can nurture us and make us whole: God. God is love. There are numerous versions of the Bible. However, The Message Bible on many occasions sums up things best of all.

Read This Out Loud

Chosen by God for this new life of love, dress in the wardrobe God picked out for you: compassion, kindness, humility, quiet strength, discipline. Be even-tempered, content with second place, quick to forgive an offense. Forgive as quickly and completely as the Master forgave you. And regardless of what else you put on, wear love. It’s your basic, all-purpose garment. Never be without it. Colossians 3:12 -14 ~ The Message

▪ Christmas Recipes ▪  from my kitchen to yours ▪  Christmas Recipes ▪

Lemon Bars Deluxe (thanks to Janet, a childhood and high school friend)
2 cups sifted flour ▪ ½ cup sifted powdered sugar ▪ 1 cup butter Preheat oven to 350 degrees. Mix and press into 9×13 baking pan.  Bake 20 …minutes. Remove from oven.
4 slightly beaten eggs ▪ 2 cups sugar ▪ 1/3 cup lemon juice ▪ ¼ cup flour ▪ ½ tsp baking powder.  Stir together and pour over baked crust. Bake 25 minutes.   Remove from oven; sprinkle with additional powdered sugar.

THE “Original” Almond Roca

1 t. & 1 c. butter, divided ▪ 1 -1/2 c. sugar  ▪ 1 T. light corn syrup    ▪ 3 T. water ▪ 1 c. almonds, coarsely chopped 1 T. almonds, finely chopped 3/4 c. chocolate chips

  1. With 1 teaspoon of butter, coat a cookie sheet and spread out the 1 c. of coarsely chopped almonds (you won’t need to go to the edges). Set aside.
  2. Melt 1 cup of butter in a medium pot. Add the sugar, corn syrup, and water. Cook, stirring frequently, until the mixture reaches 290 degrees (just before hard crack stage) on a candy thermometer.
  3. Working quickly and carefully, pour the hot mixture over the almonds on the cookie sheet. It’s ok if you don’t cover all of them.
  4. While still hot, sprinkle the top of the candy with chocolate chips. Using  a flat spatula, lightly spread the chocolate over the candy as they melt. Sprinkle the finely chopped almonds over the top.
  5. Let the chocolate cool before breaking the candy into 1-2″ pieces. Arrange in a bag, tin, or on a plate.

Coconut Macaroons

Whisk 2/3 c. granulated sugar ▪ 2 beaten egg whites  ▪ 2 t. vanilla, ½ t. salt.

Stir in 2-2/3 c. UNSWEETENED shredded coconut

Drop by tablespoonfuls and then form into pyramids with your fingers and bake at 350 degrees for 15 – 20 minutes.
